Driftwood Brasserie is a new establishment combining a chic, stylish yet traditional ambience. We are located on the first floor terrace of Dolphin Quays with spectacular views over Poole Harbour. All our ingredients are sourced locally whenever possible to ensure that only the freshest produce is served.

We are seeking an extremely talented and passionate Chef de Partie to join our brigade. The ideal candidate must be competent in a high volume, high quality environment. In addition, you must be confident with consistency and have a genuine love for food. Motivation and a genuine passion are essential. You will be able to work in a busy environment and thrive under pressure. This is an extremely rare opportunity for career-driven professionals.

PRIMARY OBJECTIVE OF THE CHEF DE PARTIE

The Chef de Partie must contribute to the production of the highest possible food quality in the delegated section at all times, and to co-ordinate and be responsible for staff in the delegated section. The Chef de Partie must carry out the production in line with appropriate food portion control and service concepts.

TASKS, DUTIES AND RESPONSIBILITIES OF THE CHEF DE PARTIE

You will prepare and properly garnish all food orders as they are received in accordance with menu specifications, insuring proper plate presentation
You will prepare sauces, soups and hot entrees; control the positioning and rotation of foods and ensure proper plate presentation
You will set up for lunch and dinner by ensuring proper amounts are in place for forecasted covers, special functions and all reservations
You will adhere to Driftwood Brasserie standards of food quality, preparation, recipes, and presentation
You will order adequate supplies for own section, and set up “mis-en-place” for section
You will supervise the proper set-up of each item on menus and insure their readiness
You will need to work with Chefs to ensure seasoning, portions, and appearance of food
You will store unused food properly
You will ensure that food from own section is delivered on time
You will follow proper safety, hygiene, and sanitation practices
You will be required to co-ordinate job tasks with staff in own section
You will help employees to achieve optimum quality
